About the Presentation

Do you find yourself staring into the refrigerator wondering what on earth to make for supper? Run out of inspiration for what to cook, or energy to do more than reheat something? Barbara Model, caterer and, more importantly, frequent dance camp party-maker, will come to the rescue, demonstrating the basics of soup making so you can make an easy meal in a hurry.

The best soups layer flavors from spices, vegetables, and stock to create rich, complex flavors worth making extra to store – so you can pull a soup out of the freezer for supper and relax, knowing it’ll be tasty and nutritious.

Recipes include

  • Fresh Pea: Onions, olive oil, vegetable stock, frozen petite peas, mint (optional: cousa or zucchini, celery root, ginger, fennel seed, leeks, white wine, etc.)
  • Roasted Cauliflower and Fennel: peanut oil, onion, garlic, cauliflower, fennel, vegetable stock (optional: turmeric, cumin, coconut milk, apple, red onion, potato, fresh herbs)
  • Butternut Squash and Chestnut: onion, vegetable oil, onion mix, vegetable stock, carrot, celery, butternut squash, roasted peeled chestnuts, jalapeño, apple (optional: roasted red pepper)
  • Yellow Split Pea and vegetables: onion, garlic, peanut oil, ginger, cayenne, yellow split peas, sweet potato, carrots, celery, cousa or zucchini, green beans, parsley, scallion, celery leaves.
